Three canneries, three completely different ideas of what a sardine should be.
Ramirez, founded in 1853, is the oldest active cannery in the world. Its style is steady and reliable: consistent fillets and a tin you can buy anywhere in Portugal.
Nuri, packed in Portimão, is the cult tin. Thicker fish, a heavier hand with spice, and a wrapper collectors keep.
Minerva works in the Matosinhos tradition — delicate fillets in a clean, restrained olive oil. It is the house to reach for when you want the fish to speak quietly.
